Cilantro-Jalapeño Glazed Grilled Salmon


We particularly like this salmon dish because it is so simple to make. Many people are investing in portable barbecues to take camping with them and this is a great recipe for them. We made this dish for our friends when we visited Glacier National Park in 2008. After a day of exploring the park, it was nice to throw a couple of things together and toss the salmon on the grill.

Ingredients
  • 4 salmon fillets
  • 1 bunch green onions
  • 1 bunch cilantro
  • 2 limes; juiced
  • 5 cloves garlic
  • 1/2 cup jalapeno jelly (this is easy to make at home if you cannot find it in the stores)
  • 2Tbsp butter

Other items you will need
You will need 4 pieces aluminum foil sheets to make grill trays.

Preparation Instructions
Glaze: At home, combine the jelly, cilantro, garlic, lime juice, and green onion in a food processor. Pulse until smooth. Place in an appropriately sized plastic container and store in the refrigerator.


Form small 'trays' using heavy aluminum foil slightly larger than the salmon. One tray is needed for each salmon fillet.   This keeps the salmon from falling apart on the grill and the glaze on the salmon.

Cooking Instructions
Place one salmon fillet on each aluminum foil tray and spoon 1/2 of the glaze over the salmon, retaining the other 1/2 for later.

Spoon the remaining glaze into a small sauce pan and add the butter. Simmer on medium heat to melt the butter and thicken. Remove the glaze from the stove after 1 minute.

Place the aluminum foil trays containing the salmon on a preheated grill. Place the lid back on the grill and cook until the salmon becomes flaky. Remove the salmon from the grill, plate and serve with the remaining glaze.
